Uncle Jack's Salad


Uncle Jack's Salad
(our version)

This recipe is from Mike's uncle in America.
(Mike's paternal family is from western Ukraine.)
It doesn't have an official name so in honor of a really special uncle,
the kids call it Uncle Jack's Salad. :)
We are so thankful to have it.
Our version is a bit different, but it is how we make it here with the ingredients available.

RECIPE:

One stick of Ukrainian Kielbasa - chopped (choose your favorite)
Brynza Cheese - one container - crumbled (feta or goat)
6-8 hard boiled eggs - coarsely chopped
 pink or white horseradish sauce  (1-2 T.)
mayonnaise (about 3 T.)
finely chopped onion (1 T.)
black pepper
salt (opt.)

~ mix all ingredients together and always serve with hard crust bread.
Note:  this recipe is adjustable.
The nice thing about cooking in Ukraine is the flexibility of the recipes.
The idea is to cook with what you have. : )
