This recipe is from Mike's uncle in America. (Mike's paternal family is from western Ukraine.) It doesn't have an official name so in honor of a really special uncle, the kids call it Uncle Jack's Salad. :) We are so thankful to have it. Our version is a bit different, but it is how we make it here with the ingredients available.
RECIPE:
One stick of Ukrainian Kielbasa - chopped (choose your favorite) Brynza Cheese - one container - crumbled (feta or goat) 6-8 hard boiled eggs - coarsely chopped pink or white horseradish sauce (1-2 T.) mayonnaise (about 3 T.) finely chopped onion (1 T.) black pepper salt (opt.)
~ mix all ingredients together and always serve with hard crust bread. Note: this recipe is adjustable. The nice thing about cooking in Ukraine is the flexibility of the recipes. The idea is to cook with what you have. : )
